It&#8217;s got history and youth culture, vibrant art and music scenes, and sustainable restaurants that rival the best in New York. And through it all, it\u2019s breezy, welcoming, and home to some of the friendliest folks you&#8217;ll ever meet (and you&#8217;re likely to meet a lot of them).<\/p>\n<p>On a recent weekend getaway, I took in the stunning scenery, befriended the locals, and dove face first into the food.<\/p>\n<h2><strong>One if by foot, two if by bike (or cross-country skis)<\/strong><\/h2>\n<p>Vermont\u2019s largest city is compact and easy to explore. The family business started on a truffle-making dare, and its latest creation, <strong>Blue Bandana Chocolate,<\/strong> is a line of exquisite small-batch, bean-to-bar concoctions. I looked for him while riding along the waterfront bike path, before veering off on the \u201c<strong><a href=\"http:\/\/www.localmotion.org\/ctc\/\" target=\"_blank\" rel=\"noopener noreferrer\">Cycle the City<\/a><\/strong>\u201d trail, a 10-mile loop that took me into majestic <strong>Ethan Allen Park<\/strong> (ascend the tower for fabulous views) and then past the founding father\u2019s homestead and into what was once his, and is now Burlington\u2019s, pride and joy: the <strong><a href=\"http:\/\/www.intervale.org\/\" target=\"_blank\" rel=\"noopener\">Intervale<\/a><\/strong>.<\/p>\n<p><img decoding=\"async\" class=\"wp-image-33663 aligncenter lazyload\" src=\"data:image\/gif;base64,R0lGODlhAQABAIAAAAAAAP\/\/\/yH5BAEAAAAALAAAAAABAAEAAAIBRAA7\" data-src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/Screen-Shot-2012-11-19-at-1.06.40-PM.png\" alt=\"intervale\" width=\"350\" height=\"228\"><noscript><img decoding=\"async\" class=\"wp-image-33663 aligncenter lazyload\" src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/Screen-Shot-2012-11-19-at-1.06.40-PM.png\" alt=\"intervale\" width=\"350\" height=\"228\" srcset=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/Screen-Shot-2012-11-19-at-1.06.40-PM.png 628w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/Screen-Shot-2012-11-19-at-1.06.40-PM-300x196.png 300w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/Screen-Shot-2012-11-19-at-1.06.40-PM-38x25.png 38w\" sizes=\"(max-width: 350px) 100vw, 350px\" \/><\/noscript>A vast expanse of fertile land, the Intervale had been used for farming long before the Revolutionary War hero set up his own farms here, but it was a veritable wasteland throughout much of the 20th century. Then, in the \u201880s, Will Raap and a band of new pioneers took the are back to its roots. Today, the 700-acre swath of land at Burlington\u2019s north end is both past and future\u2014historic farmland bringing about a whole new model of sustainable living for communities of the 21st century.<\/p>\n<p>The Intervale feeds the Burlington area both with its food and as a community. Regular \u201cSummervale\u201d festivals spark old-fashioned community spirit, and come winter cross-country ski trails keep the spirits up. The magic behind much of Burlington\u2019s recreation? <strong><a href=\"http:\/\/www.localmotion.org\/\" target=\"_blank\" rel=\"noopener\">Local Motion<\/a><\/strong>, a nonprofit advocate of \u201cpeople-powered transportation.\u201d We have them to thank for for Cycle the City and countless other trails and initiatives, as well as bike rentals in the summer (at the <strong>Local Motion Trailside Center<\/strong>) and <strong>Wintervale<\/strong> (cross-country skiing, snowshoeing, and much more) in the .<\/p>\n<h2><strong>Food for thought<\/strong><\/h2>\n<p>The food&#8217;s the thing in Burlington, and it&#8217;s served up with positivity and panache. With nearly eight percent of food consumed here coming from the Intervale, and a majority of the rest from around Vermont farms, eating locally is a way of life.<\/p>\n<p><img decoding=\"async\" class=\"size-full wp-image-33641 aligncenter lazyload\" title=\"veggie burger\" src=\"data:image\/gif;base64,R0lGODlhAQABAIAAAAAAAP\/\/\/yH5BAEAAAAALAAAAAABAAEAAAIBRAA7\" data-src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/269104_234404853251899_5526204_n.jpg\" alt=\"veggie burger\" width=\"315\" height=\"210\"><noscript><img decoding=\"async\" class=\"size-full wp-image-33641 aligncenter lazyload\" title=\"veggie burger\" src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/269104_234404853251899_5526204_n.jpg\" alt=\"veggie burger\" width=\"315\" height=\"210\" srcset=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/269104_234404853251899_5526204_n.jpg 720w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/269104_234404853251899_5526204_n-300x200.jpg 300w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/269104_234404853251899_5526204_n-37x25.jpg 37w\" sizes=\"(max-width: 315px) 100vw, 315px\" \/><\/noscript>I got my first clue about Burlington\u2019s approach to food on the floor of <strong><a href=\"http:\/\/www.farmhousetg.com\" target=\"_blank\" rel=\"noopener\">Farmhouse Tap &amp; Grill<\/a><\/strong>\u2014its recognizable brick is the only thing that links the buzzing tap room to what was once the town&#8217;s only McDonalds. Unlike at the fast-food chain, the \u201call-beef patties\u201d (and everything else) at Farmhouse are local and specialized, while the beers on the vast menu hearken from around the globe, with many a local option.<\/p>\n<p>While in some places it\u2019s a \u201cthing&#8221; to announce every ingredient, other spots are intriguingly secretive. With a hushed and conspiratorial (and contagiously enthusiastic) tone, a friendly local told me about <strong>Four Corners of the Earth <\/strong>(cash only). Tucked in an uninspiring business complex, the sandwich joint is like the underground lair of a mad and brilliant (sandwich) scientist, replete with eclectic decor and a proprietor, Latzo, who is equal parts amiable hippie and amusing curmudgeon (when I asked where he was from he replied, with surly grin, \u201cMars. Where are you from?\u201d).<\/p>\n<p>The vast selection of sandwiches are named by country and protein only (Czech Chicken, Tibetan Tofu&#8230;), and I was warned in no uncertain terms to avoid inquiring about the other ingredients. While constructing my Lebanese Lamb, Latzo made small talk with a few regulars who greeted him by name as they trickled in, and after I devoured perhaps the best sandwich I\u2019ve ever tasted and headed back into the bright light of day, I too felt I\u2019d been let into the fold.<\/p>\n<p><a href=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/3028832044_49e1ce333d_z.jpg\"><img decoding=\"async\" class=\"wp-image-33642 aligncenter lazyload\" title=\"skinny pancake crepe\" src=\"data:image\/gif;base64,R0lGODlhAQABAIAAAAAAAP\/\/\/yH5BAEAAAAALAAAAAABAAEAAAIBRAA7\" data-src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/3028832044_49e1ce333d_z.jpg\" alt=\"skinny pancake crepe\" width=\"315\" height=\"237\"><noscript><img decoding=\"async\" class=\"wp-image-33642 aligncenter lazyload\" title=\"skinny pancake crepe\" src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/3028832044_49e1ce333d_z.jpg\" alt=\"skinny pancake crepe\" width=\"315\" height=\"237\" srcset=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/3028832044_49e1ce333d_z.jpg 640w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/3028832044_49e1ce333d_z-300x225.jpg 300w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/3028832044_49e1ce333d_z-33x25.jpg 33w\" sizes=\"(max-width: 315px) 100vw, 315px\" \/><\/noscript><\/a>Lunch at the bright and bustling <strong>Skinny Pancake<\/strong> is a different experience. Here I not only had all the ingredients of my crepe, but heard the story of the squash puree from a decidedly \u201cun-curmudgeonly\u201d Benjy Adler. As part of their mission to make eating local accessible and affordable (\u201cLocavore doesn\u2019t have to mean haute couture\u201d), Benjy and his brother, Jonny\u2014who together built a humble crepe stand into local food movement\u2014often purchase in bulk and freeze produce for use in the off-season (my squash was part of a surplus that they took off a farmer\u2019s hands and pureed for future use). Here, it\u2019s not just about the food but about the community\u2014working with farmers, supporting local and environmental causes, and showcasing local artists and musicians.<\/p>\n<h2><strong>The \u201cGreat Good Places\u201d<\/strong><\/h2>\n<p>Not surprisingly, the Adler brothers (and Local Motion, and the Intervale&#8230;) are not the only ones who foster a sense well-being and community. Another of Burlington\u2019s favorite establishments, <strong><a href=\"http:\/\/americanflatbread.com\/restaurants\/burlington-vt\/\" target=\"_blank\" rel=\"noopener\">American Flatbread Burlington Hearth<\/a><\/strong> (115 Saint Paul Street), is beer hall (all beer comes from the in-house brewery, Zero Gravity), harbinger of the local-food movement (founded in Waitsfield, VT, the small chain was an early leader in local sourcing), and much more.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-33665 size-full lazyload\" title=\"flatbread\" src=\"data:image\/gif;base64,R0lGODlhAQABAIAAAAAAAP\/\/\/yH5BAEAAAAALAAAAAABAAEAAAIBRAA7\" data-src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/flatbread.png\" alt=\"american flatbread burlington hearth\" width=\"297\" height=\"297\"><noscript><img decoding=\"async\" class=\"aligncenter wp-image-33665 size-full lazyload\" title=\"flatbread\" src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/flatbread.png\" alt=\"american flatbread burlington hearth\" width=\"297\" height=\"297\" srcset=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/flatbread.png 620w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/flatbread-150x150.png 150w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/11\/flatbread-24x25.png 24w\" sizes=\"(max-width: 297px) 100vw, 297px\" \/><\/noscript>Over the night\u2019s special, a tangy pulled-pork number, co-founder Paul Sayler gave me a quick lesson in beer brewing, introduced me to a smokey Rauchbier, and explained the establishment\u2019s name. Hearth represents a gathering place, in keeping with Ray Oldenburg\u2019s concept of the \u201c<strong><a href=\"http:\/\/www.fastcodesign.com\/1665202\/3-keys-to-creating-great-good-places\" target=\"_blank\" rel=\"noopener\">Great Good Place<\/a>,<\/strong>\u201d a public \u201cthird space\u201d (outside of home and work) where people can connect. And the always buzzing restaurant is just that. Housed in a cavernous, historic brick structure, it has the cozy feel of an old German beer hall, with long wooden tables and a wood-fire \u201chearth\u201d as the room\u2019s centerpiece.<\/p>\n<p>Third places like this abound in Burlington, from rockin\u2019 music venues like <strong><a href=\"https:\/\/www.radiobean.com\/\" target=\"_blank\" rel=\"noopener\">Radio Bean Coffeehouse<\/a><\/strong>, a grungy, everything-goes cafe-bar, to mellower spots like <strong>Muddy Waters<\/strong>, a homey, rustic coffee shop. The latter, modeled after the comfy cafe-culture of Santa Cruz, is warm and unassuming, with tin ceilings, mismatched furniture, and bespoke cocktails.<\/p>\n<p>I sipped some java on a tattered Victorian couch at Radio Bean, while young folks with pink hair, combat boots, and facial piercings discussed art and politics over experimental jazz. At Muddy, it was a church pew, folk music, and mostly business meetings and study dates. The common denominator of these disparate experiences was witnessing surprise run-ins of friends who weren\u2019t expecting one another. With a primo location two blocks from both the waterfront and Church Street, the <a href=\"http:\/\/www.marriott.com\/hotels\/travel\/btvdt-courtyard-burlington-harbor\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Courtyard Burlington Harbor<\/strong><\/a> offers all the reliable comforts one comes to expect from Marriott. Rooms (from $229 a night) are spacious and classically decorated, and many offer inspiring lake views. The hotel also has an on-site restaurant and indoor swimming pool.<\/p>\n<p>Home sweet home. With no sign out front, the boutique&nbsp;<a href=\"http:\/\/madeinnvermont.com\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Made Inn Vermont<\/strong><\/a> (from $195 a night) feels like an extra-cool secret club. Nooks and crannies abound, including a \u201cWidow\u2019s Walk\u201d that boasts breathtaking views of the town and the lake.
