This means no olive oil, citrus, black pepper, cane sugar, or anything else that needs to be imported. All food waste will be composted or fed to animals, and everything will be stored in reusable containers&#8211;even the sous vide will be modified and made in glass jars&#8211;and the 100% post-consumer recycled paper towels will either be burned or composted. Eventually, Vinland will run on self-generated solar energy. As for flavor, dishes will be heavily influenced by Nordic, Italian, and indigenous American cuisine. David is influenced as well by the lesser-known local Acadian-French culture, which is most well known for its <em>ployes<\/em>, gluten-free buckwheat pancakes. I love biking to local beaches, like <a href=\"http:\/\/www.scarboroughbeachstatepark.com\/\" target=\"_blank\" rel=\"noopener\">Scarborough beach<\/a> and <a href=\"http:\/\/ferrybeach.org\/\" target=\"_blank\" rel=\"noopener\">Ferry beach<\/a>.\u201d<\/p>\n<p><strong>For coffee: <\/strong>&#8220;<a href=\"http:\/\/www.yelp.com\/biz\/speckled-ax-wood-roasted-espresso-portland\" target=\"_blank\" rel=\"noopener\">Speckled Ax<\/a> just opened a couple of months ago by Matt Bolinger, owner of <a href=\"http:\/\/www.mattscoffee.com\/\" target=\"_blank\" rel=\"noopener\">Matt\u2019s Coffee<\/a>. The coffee is organic and wood roasted, and will be the coffee served at Vinland. They do a terrific job of roasting the coffee. The roasting \u2018oven\u2019 is fired with local wood. They\u2019re doing things in a good way, and make a great cup of coffee. There\u2019s been a coffee renaissance in Portland recently, and there\u2019s another place called <a href=\"http:\/\/www.tandemcoffee.com\/\" target=\"_blank\" rel=\"noopener\">Tandem Coffee<\/a> opening soon which I\u2019m excited about. It\u2019s almost too much of a good thing! Tandem Coffee is owned by a couple that lived in San Francisco and then Brooklyn. They hail from\u00a0<a href=\"http:\/\/www.bluebottlecoffee.com\/\" target=\"_blank\" rel=\"noopener\">Blue Bottle Coffee<\/a>, which is the \u201cgo to high quality coffee roaster in SF, best-regarded in the country. Evans has owned Hugo\u2019s for many years; he won the James Beard award, and gained national recognition. \u201cHe\u2019s possibly regarded as the best chef in Portland, and he\u2019s the most adventurous chef. He\u2019s relaxing for the first time in 10 years by opening Duckfat, which is a sandwich shop with great French fries fried in duck fat. It\u2019s always jam-packed, good quality and pretty affordable.&#8221; For brunch, David suggests <a href=\"http:\/\/www.vignolamaine.com\/\" target=\"_blank\" rel=\"noopener\">Vignola<\/a>, Five Fifty-Five, and <a href=\"http:\/\/caiolas.com\/\" target=\"_blank\" rel=\"noopener\">Caiola\u2019s<\/a>.<\/p>\n<p><strong><\/strong><strong>For a Portland day trip:<\/strong> \u201cNew York is so full of friends and family\u2014I built my life there\u2014but it was so hard to get to wild nature. The great thing about Portland is that it\u2019s so incredibly easy. My friend has a sailboat; we went on a sailing trip recently. Lots of people have boats, and it\u2019s a super easy and low-key thing to do. You don\u2019t have to go that far outside of Portland to find nature, so you don\u2019t really need a getaway. You can just take a relatively easy bike ride to one of the many parks, or inland to <a href=\"http:\/\/sebagolakecamping.com\/\" target=\"_blank\" rel=\"noopener\">Sebago Lake<\/a>, where there\u2019s great swimming, and canoeing. It\u2019s 25-30 minutes away [or a two-hour bike ride] to <a href=\"http:\/\/www.visitmaine.com\/organization\/2132\/wolfes_neck_woods_state_park\/\" target=\"_blank\" rel=\"noopener\">Wolfe\u2019s Neck Woods State Park<\/a> or <a href=\"http:\/\/bradburymountain.com\/\" target=\"_blank\" rel=\"noopener\">Bradbury Mountain State Park<\/a>, and then you can really be surrounded by deep wood. <a href=\"http:\/\/www.baxterstateparkauthority.com\/\" target=\"_blank\" rel=\"noopener\">Baxter State Park<\/a> and <a href=\"http:\/\/www.nps.gov\/acad\/index.htm\" target=\"_blank\" rel=\"noopener\">Acadia State Park<\/a> are three hours from Portland. The northern end of the Appalachian Trail is on Katahdin and there are lots of skiing destinations\u2014Sugar Loaf, Sunday River, among others.\u201d<\/p>\n<p><strong><img decoding=\"async\" class=\"size-full wp-image-31379 alignleft lazyload\" title=\"Rosemont Bakery \" alt=\"Rosemont Bakery \" src=\"data:image\/gif;base64,R0lGODlhAQABAIAAAAAAAP\/\/\/yH5BAEAAAAALAAAAAABAAEAAAIBRAA7\" data-src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/182722_375565102500094_1793372454_n.jpg\" width=\"236\" height=\"314\" \/><noscript><img decoding=\"async\" class=\"size-full wp-image-31379 alignleft lazyload\" title=\"Rosemont Bakery \" alt=\"Rosemont Bakery \" src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/182722_375565102500094_1793372454_n.jpg\" width=\"236\" height=\"314\" srcset=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/182722_375565102500094_1793372454_n.jpg 540w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/182722_375565102500094_1793372454_n-225x300.jpg 225w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/182722_375565102500094_1793372454_n-18x25.jpg 18w\" sizes=\"(max-width: 236px) 100vw, 236px\" \/><\/noscript>For a sustainable snack:<\/strong> David buys his groceries from Rosemont Market, Whole Foods, Trader Joe\u2019s, and farmers markets, and sometimes buys directly from the farmers themselves, mostly eggs and meat. \u201cWe get fresh local produce straight through the year,\u201d he says. The <a href=\"http:\/\/www.portlandmainefarmersmarket.org\/\" target=\"_blank\" rel=\"noopener\">Portland Farmers Market<\/a> is open Saturday morning in <a href=\"http:\/\/www.deeringoaks.org\/\" target=\"_blank\" rel=\"noopener\">Deering Oaks Park<\/a>, which is like an \u201cunderused, underdeveloped Central Park,\u201d and Wednesday morning in <a href=\"http:\/\/en.wikipedia.org\/wiki\/Monument_Square_(Portland,_Maine)\" target=\"_blank\" rel=\"noopener\">Monument Square<\/a>. The winter farmers market is indoors at the <a href=\"http:\/\/www.maineirish.com\/\" target=\"_blank\" rel=\"noopener\">Maine Irish Heritage Center<\/a>, and is \u201cmuch more limited, but it\u2019s a challenge to be more creative with food.\u201d<\/p>\n<p><strong>For dinner:<\/strong> David\u2019s favorite place for dinner is <a href=\"http:\/\/www.miyakerestaurants.com\/\" target=\"_blank\" rel=\"noopener\">Miyake<\/a>. Japanese chef Masa Miyake, was trained in New York, Italy, and France. \u201cHe moved to Portland because he thought he was never going to afford to open his own restaurant in New York, and Maine reminded him of his home island Hokkaido. He\u2019s doing incredible things with food, and has a tremendous reputation. The new spot is much sleeker than his original hole-in-the-wall place, but it\u2019s quite a bargain for LA and New York people, and those who are serious about Japanese food.\u201d<strong><\/strong> David also appreciates <a href=\"http:\/\/www.forestreet.biz\/\" target=\"_blank\" rel=\"noopener\">Fore Street<\/a>, which \u201claunched the local food movement in terms of cuisine as opposed to just farmers markets.\u201d<\/p>\n<p><strong><img decoding=\"async\" class=\"size-full wp-image-31369 alignright lazyload\" title=\"Old Port\" alt=\"Old Port\" src=\"data:image\/gif;base64,R0lGODlhAQABAIAAAAAAAP\/\/\/yH5BAEAAAAALAAAAAABAAEAAAIBRAA7\" data-src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/2403160045_88e437acc4_z.jpg\" width=\"350\" height=\"237\" \/><noscript><img decoding=\"async\" class=\"size-full wp-image-31369 alignright lazyload\" title=\"Old Port\" alt=\"Old Port\" src=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/2403160045_88e437acc4_z.jpg\" width=\"350\" height=\"237\" srcset=\"https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/2403160045_88e437acc4_z.jpg 640w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/2403160045_88e437acc4_z-300x202.jpg 300w, https:\/\/offmetro.com\/ny\/wp-content\/uploads\/2012\/08\/2403160045_88e437acc4_z-36x25.jpg 36w\" sizes=\"(max-width: 350px) 100vw, 350px\" \/><\/noscript>For a drink:<\/strong> David likes the feel of <a href=\"http:\/\/novareresbiercafe.com\/\" target=\"_blank\" rel=\"noopener\">Novare Res Bier Caf\u00e9<\/a> (Novare Res means \u201cstart the revolution\u201d in Belgian). \u201cThey have an incredible assortment of beers, lots of local beers and small-production beers from all over. They focus mostly on Belgian and Belgian-style beers. It has an old-world feel and is semi-underground.&#8221;<\/p>\n<p><strong>For something sweet:<\/strong> With his Italian roots, David is partial to <a href=\"http:\/\/www.gorgeousgelato.com\/\" target=\"_blank\" rel=\"noopener\">Gorgeous Gelato<\/a>, which is owned by a Milanese man.
