Place squash and star anise into a pot with enough room to cover with water.\u00a0 Cover with water.<br \/>\n<strong>2. <\/strong>Allow to simmer until the squash becomes tender. Remove from heat. Allow to cool about 20 min.<br \/>\n<strong>3.<\/strong> Place squash and half the cooking liquid into a blender. Season with salt. Start on low speed then gradually turn up until it&#8217;s on high. Strain through fine sieve if desired. If the soup is too thick, add more cooking liquid until desired thickness.<\/p>\n<p><strong>How to Make the Cr\u00e8me Fraiche Topping<br \/>\n<\/strong><\/p>\n<p>In a bowl mix cr\u00e8me fraiche and cinnamon and a pinch of salt.<\/p>\n<p><strong>How to Plate the Dish<br \/>\n<\/strong><\/p>\n<p>Place 10 marshmallows in the center of a soup bowl, use a blow torch and brown to the degree which you desire. Heat soup. Pour the hot soup into the bowl. Drizzle cinnamon cr\u00e8me fraiche and enjoy!<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p><strong>What Fall Ingredients Should We Be Using?<br \/>\n<\/strong><em>Beets and Squash.<\/em> Chef David Diaz of <a title=\"Brasserie Beaumarchais\" href=\"http:\/\/www.brasseriebeaumarchais.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Brasserie Beaumarchais<\/a> is all about the beets. He\u2019s serving them this fall as a salad of roasted reds, yellows and candy canes with pistachio goat cheese. Diaz\u2019s festival taste, however, highlighted another root vegetable: squash (see sidebar for squash soup recipe).<\/p>\n<p><em>Sunchokes.<\/em> Chef Christopher Cipollone of Tenpenny praised the sunchoke for its versatility. \u201cYou can enjoy them as a soup, saut\u00e9ed, as chips, baked, boiled, fried\u2026whatever you can do with the potato you do with a sunchoke.\u201d You can also make a sunchoke \u201csoil,\u201d as Cipollone did for his grand tasting dish, by deeply caramelizing the vegetables, then combining them with flour, forming the mixture into a cake, baking it and then grinding it in a food processor.<\/p>\n<p><strong>Best Thai in NYC<\/strong><br \/>\nChef Cipollone falls back on Woodside\u2019s <a title=\"Sripraphai Restaurant website\" href=\"http:\/\/sripraphairestaurant.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Sripraphai<\/a>.<\/p>\n<p><strong>Best Culinary Getaways Near NYC<\/strong><br \/>\nFor a short and delicious trip out of the city, Chef Cipollone puts <a title=\"The Cookery website\" href=\"http:\/\/www.thecookeryrestaurant.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">The Cookery<\/a> in Dobbs Ferry, Crabtree&#8217;s Kittle House in Chappaqua, and <a title=\"Pour Cafe and Wine Bar\" href=\"http:\/\/www.pourmtkisco.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Pour Cafe and Wine Bar<\/a> in Mt.
